Seafood Recipes

Here are some of our favourite seafood recipes. These easy recipes will have your family members or dinner guests raving about your cooking skills!

Prawns, Bisque & Mussel Soup

Ingredients (serves 2)

  • 30gms Salted Butter
  • 1 Cup Prawn Bisque
  • 3/4 Cup cooking cream
  • 6 prawn cutlets
  • 6 mussels (with or without shell)
  • Toasted bread rubbed with garlic
  • Parsley, Basil or Chives to sprinkle


Method

Bring the Butter, Bisque and cream to a boil, after 3 minutes add prawns and mussels. Boil for another 5 minutes.

Serve on top of bread and serve with chosen herbs.

White Wine Prawn Pasta

Ingredients (serves 2)

  • 200gms Prawn Cutlets
  • 4 tsp EVOO (Extra Virgin Olive Oil)
  • 2 cloves garlic sliced
  • 1/2 cup White Wine
  • 1 tsp chopped parsley
  • 1/2 cup prawn bisque
  • Lemon zest
  • 1tbs chopped parsley
  • **Optional 10 halved cherry tomatoes
  • 200gms of your favorite pasta


In a large Frypan heat olive oil and garlic for 2 minute - until fragrant. Add prawns and cook for a further 3 minutes. **If you are adding the tomatoes please add them now and cook for 5 minutes. Add in Parsley, salt, wine and bisque. Reduce to half and remove from heat. Cook the pasta as per the instructions on the packet but remove from heat 1/4 of suggested time early. Retain a little of the pasta water and add to the sauce. Stir through pasta and cook until Pasta is al dente.

Serve with lemon zest and parsley. Season to taste.

  • Scallop-Spaghetti-Cream-Sauce


Creamy Bisque and Scallop Pasta

Ingredients (serves 2)

  • 10 Good size scallops
  • 30gms Salted Butter
  • 1 cup prawn bisque
  • Juice of half a lime
  • 1/2 cup cooking cream
  • 200gms of your favorite short pasta (or Gnocchi)
  • Lime zest to sprinkle

 

Melt butter in a small pot, when melted add raw scallops and stir for two minutes. Add bisque, cream and lime juice and reduce the sauce to half. Cook pasta as per the instructions on the packet. Add to creamy sauce and stir. Served with sprinkled lime zest.

Prawn Bisque and Tomato Penee

Ingredients (serves 2)

  • 3tbs Extra Virgin Olive Oil
  • 2 garlic cloves finely sliced
  • 200gms cherry tomatoes
  • 3/4 Cup prawn bisque
  • Chilli (optional to taste)
  • Salt
  • Sugar
  • Parsley
  • 200gms Pasta

 

In a large fry pan heat olive oil and garlic for 1 minute until fragrant. Once ready add in Cherry tomatoes, pinch of sugar, a pinch of salt and Chilli (if using) to taste. Cook whilst continuously stirring until caramelized. Add in bisque, continue to stir for 1 minute. Cook pasta according to directions on packet but remove from heat just before fully cooked. Add the pasta to the sauce and allow to finish cooking. Stir until creamy and serve with sprinkled parsley. Season to taste.
